The following are selected recipes from St. Alexis Orthodox Church, Palm Coast, Florida.

Zucchini Casserole

4 cups zucchini chunk

1 onion, chopped

1 cup mayonnaise

black pepper

2 eggs

1/2 cup green pepper, cut in small pieces

1 cup Parmesan cheese

Flavored breadcrumbs (optional)


Wash zucchini, trim, and cut into 1-inch cubes or slices.  Steam in water until nearly cooked and drain.  Combine remaining ingredients except the breadcrumbs.  Place in baking dish.  Top with breadcrumbs if desired.  Bake at 350 degrees for 30 minutes or until knife cuts clean from the center of the casserole.

Party Chicken

4 whole boneless, skinless chicken breasts (cut in 1/2 = 8)
8 slices of bacon
8 oz. chipped beef
1 can cream of mushroom soup ( condensed)
1 pt. sour cream

Wrap each 1/2 chicken in 1 slice of bacon
Grease 9 x 13 pancover bottom of pan with chipped beef (pull apart)
Arrange chicken on top (top side down)
Blend soup with sour cream and spread over chicken
Ssprinkle with paprika

Bake uncovered 275 degrees, for 3 hours

Italian Love Cake Recipe

1 box Marble Fudge Cake--mix as directed & put in greased 9x13 pan

Mix & spoon over above:
2 lbs ricotta cheese
1/2 c. sugar
4 eggs
1 tsp. vanilla

Bake 350 degrees for 1 hour and let cool.

Mix 1 sm. Chocolate Pudding with 1 cup cold milk
Fold in 1 sm. cool whip
Put mixture on top of cooled cake and refrigerate

Raspberry Ganache Pie

1 pkg. Baker's Semi-Sweet Chocolate (8 squares)
1 cup heavy whipping cream (8 oz)
6 Tbsp. seedless raspberry jam (divided)
1 OREO Pie Crust (or make your own :)
2 cups fresh raspberries
1 Tbsp. water

Coarsely chop up all chocolate
Microwave chocolate & cream in microwaveable bowl on HIGH 1 minute.
Stir. Microwave 1 more minute (chocolate should be almost melted)
Beat with whisk until completely melted and well blended.
Stir in 2 Tbsp. jam,
Pour into crust.
Refrigerate 4 hours.
After 4 hours, arrange berries (after cleaned) on top of pie.
Microwave remaining jam (4 Tbsp.) & water in small micro. bowl on HIGH 30 sec.
Stir until well blended.
Brush onto berries.
Keep refrigerated.
Nice to serve with whipped cream.

Can be prepared ahead of time. Freeze up to 2 days. Thaw in fridge 2 hours before serving.
